Marking its first major deployment of 2018, Operation Barbecue Relief (OBR) sent its Command Center, Smoker trailer “Boss Hog” with a capacity to provide 75000 number of meals per day, and expert team of barbecue chefs and other volunteers to Redding, California this week to provide hot barbecue meals for the victims displaced by the wildfire and the first responders who are battling the blaze.
The Command Center, sponsored by Prairie Fresh/Seaboard, a modified 18-wheeler, and accompanying trailer with five commercial smokers provided by Ole Hickory Pits and a 60,000 watt generator provided by Sunbelt Rentals, is scheduled to arrive on site on Tuesday and will prepare upwards of 6,000 meals per day. The Salvation Army will deliver these meals to the four main evacuation centers in the region.
OBR’s mission is to respond to natural disasters and other situations to help feed displaced residents and emergency personnel. This effort is made possible by the generous donations of food, supplies and funding from across the country.

What people probably don’t think about is health code citations. Unfortunately, Frank Lennix has cooked up some of the most common, easily rectifiable health citations found in a kitchen. Lennix warns that these might be disturbing, and they certainly are gross, but they’re a reality for many restaurant kitchens.

General Cleanliness

Anyone who has ever worked with food, in any capacity, knows that keeping a workstation clean is rule number one. In the kitchen, cleanliness is next to Godliness. Yet, many of the people citations for kitchen related health risks are due to uncleanliness. The inspectors who are giving these citations are going to restaurants. At restaurants, people pay for a meal that is supposed to be made by a professional. Although, it’s difficult to call anyone who can’t even clean up after themselves much of an adult, let alone professional.

Chemical Use

Yes. Chemicals. Cleaning products are among the largest offenders. It's usually safe to assume people aren’t cooking with chemicals. Although while cleaning, sometimes the right chemicals are not being used. For example, if the raw chicken is on a table, that table must be sanitized. Not cleaned, sanitized. Soap and water aren’t doing the trick. Kitchens are often called out for improper cleaning procedures.

Cross-Contamination

This is gross, just on principle. Unfortunately, according to Lennix, it happens with a frequency that’s alarming. Cutting raw meat before cutting raw vegetables is cross-contamination. Cross-contamination also occurs when that chicken bacteria isn’t properly sanitized off the table. Cross contamination is usually due to negligence and laziness. It’s a simple, easy mistake, that could have dire consequences.

Temperature

Another disgusting common kitchen citation is allowing food to reach an unsafe temperature. Food is stored in the refrigerator or freezer to keep bacteria from growing. The warmer something is, the more bacteria copulate. Mold is a visual fungus. Yet, most bacteria isn't so obvious. That’s why there are specific temperature restrictions on food. When storing, food must remain at a specifically low temperature. While heating, to cook the food enough, it must reach a certain internal temperature. This is basic food preparation, Yet, there are plenty of kitchens that do not abide by these rules. Again, their laziness could eventually cause someone to become sick, or even perish.

Its GDP of US$262b in the first quarter of 2018 makes Indonesia the largest economy in South East Asia. According to the World Bank Indonesia has significantly improved its ranking in the Ease of Doing Business (EODB) index for 2018 and has climbed 19 places to 72 from its previous rank of 91.

Indonesia is the largest country in the world in terms of tuna landings and it is in the world's top three producers of shrimp. However domestic production is currently insufficient to sustain its canneries. It is the 6th largest producer of canned tuna. As a result Indonesia continues to import tuna and many other kinds of fish especially crustaceans and imported 195,296 MT in 2017. In an effort to boost its local fishing industry Indonesia has been investing heavily and has taken stern action against Illegal Unreported and Unregulated fishing.

Against this background and in order to regulate the import of fish products used as industrial raw materials and to improve national competitiveness, the Ministry of Trade of the Republic of Indonesia has published a new Regulation No: 66 of 2018. The import of the regulated fish products is allowed only by importers with API-P (Producer) and API-U (General) licences issued by the Minister. An English translation of the Regulation may be downloaded from the URL shown below.

Applications to import fish products will be approved only if the importer holding an API-P licence can show evidence of cold storage, refrigerated transport and a recommendation from the Minister of Industry whereas holders of API-U licences must submit a distribution plan. The import approvals are valid for 1 year.

For goods that are already packaged a label in Bahasa Indonesia and English must show the commercial name of the goods as well as the scientific name, the net weight and name and address of importer and exporter. Agave– All tequilas are produced from a plant called “Agave”, preferably Blue Agave. The blue agave plant grows into very large succulents that are very spiky. The Agave plant looks similar to an Aloe Vera plant but the Agave is a much stronger and larger in its overall size. The blue agave is typically grown at least 7-10 years before it reaches it ideal sugar levels to maximize its production for tequila.

Silver or “Blanco” Tequila is the most basic of the three. Silver Tequila is not aged so that it intentionally emits a stronger flavor and bouquet of the blue agave plant. The coloring of the tequila is clear and is usually 100% blue agave.

Reposado- translated to English means “restful” which implies that this type of tequila is aged or rested. Reposado Tequila is typically aged in white oak casks from 2 months to a year. Reposado must be aged for a minimum of 2 months to be called Reposado. The aging process is strictly monitored and enforced by the CRT. The aging process gives the tequila a mellow oak flavor combined with the flavor of the blue agave. The coloring of a Reposado is usually a slight golden color.

Añejo Tequila is typically aged in white oak barrels for over a year and aged in smaller batches. The lengthy aging process gives the tequila a heavier oak flavor and more complex qualities. Añejo must be aged for a minimum of 12 months to be called Añejo. The longer aging process creates an añejo tequila that’s a light brownish color.

Añejo XXtra Tequila is typically aged in white oak barrels for over 2 years and typically more than 5 years and is also aged in smaller batches. The extended aging process gives the tequila a heavier oak flavor and more complex qualities. longer aging process creates an añejo tequila that’s a darker brownish color. Some tequila makers are using Scotch Whiskey Barrels to enhance the flavors and smoothness of the tequila.
